Those Aren’t Pancakes… They’re Mancakes!

17th June, 2012 By: Cath

Mancakes from Cath's Cookery Creations! | www.cathscookerycreations.com
As mentioned in the English Muffin post, Sunday’s are generally a little more exciting on the breakfast front and most of the time we have pancakes.

I spent a long time looking for that perfect pancake recipe and I am pretty happy with the one I settled on.  The pancakes are really fluffy and as I now tend to make them the size of the fry pan (mainly out of sheer laziness to make only one pancake instead of multiple), my husband has stopped calling them pancakes and started calling them mancakes.

English Muffins

English Muffins from Cath's Cookery Creations | www.cathscookerycreations.com
One sunny Saturday morning the hubby mentioned that he had a craving for Eggs Benedict.  On Sunday’s we generally have something a bit more flash than cereal or toast so I said I would make it for him for breakfast the next morning.  A few weeks previous, I purchased the Le Cordon Bleu set of 20 The Original Masterclass cookbooks.  One of the books was Muffins and in it a recipe for English Muffins.  As I couldn’t be bothered going to the supermarket (a whole 10 minutes away), and had all of the ingredients, I decided to try my hand at making a batch.

Popcorn and Malteser Macarons

15th May, 2012 By: Cath

My friends and I had a favourite movie snack growing up, being popcorn and maltesers.  The saltiness from the fresh popcorn combined with the chocolatey goodness that is the malteser is absolutely delicious.  Many I have told of this combination have turned their nose up, but I have managed to convert a few along the way.

For my first foray into the macaron world, I thought I would pay homage to this treat by making Popcorn and Malteser Macarons.

Vegetarian Lasagne

4th May, 2012 By: Cath

When my husband and I started dating, most Friday nights he would come and stay and we would head to the local pub for dinner.  Being a small country town, there is generally only ever one vegetarian option on the menu (if you’re lucky) and at this particular establishment it was vegetarian lasagne.

It was tasty, but then we decided we should have a go at making our own…

My Second Attempt to Cook Like Heston – Exploding Chocolate Gateaux

22nd April, 2012 By: Cath

Because I couldn’t choose which tart to make for Easter lunch dessert, I obviously had to make both the Lemon Tart and the Exploding Chocolate Gateaux as the gateaux looked too divine to wait for another occasion.

My First Attempt to Cook Like Heston – Lemon Tart

22nd April, 2012 By: Cath

Because I had been living under a rock it seemed, I didn’t realise that Heston Blumenthal’s latest series How to Cook Like Heston was showing on SBS until I stumble across the second episode, “Eggs”, one Thursday night.

I was especially interested in his technique for cooking poached eggs, as it is something I have difficulty with, but then came the recipe for the lemon tart which obviously I HAD to cook as soon as possible.

Christmas 2011 – Bûche de Noël

22nd April, 2012 By: Cath

Bûche de Noël (Yule Log) from Cath's Cookery Creations! | www.cathscookerycreations.comThe hubby and I moved into our new house the week before Christmas in 2010.  On that day, our parents made a reservation for Christmas 2011 to be held at our house.  That was fine by us as we both love to cook (needless to say, our house was basically built around our kitchen)

So in the months before Christmas we were working out a menu, and most importantly, what the dessert centrepiece would be.

My Best Friend’s Wedding… Cake

17th April, 2012 By: Cath

My Best Friends Wedding Cake from Cath's Cookery Creations! | www.cathscookerycreations.com
In February I had the utmost pleasure of making the wedding cake for one of my best friend’s on her wedding day.  I have never EVER made a wedding cake before, and given I had only got married myself in October last year, I knew how much pressure there is for it to be perfect (after the annoyance we went through with ours, but that’s another story).
