Portuguese Tarts

Before I met my husband I had never eaten a Portuguese Tart.  There is a woman at our local farmers market who sells different pastries, including these little beauties and he brought one home for me to try.  Needless to say I absolutely loved it.

Jamie Oliver has a recipe for Quick Portuguese Tarts in his 30 Minute Meals cook book which we have made a couple of time that uses créme fraîche rather than making a custard and the hubby and I have made those a couple of times as they’re quite delicious.  After a recent order of my Oreo Cookies and Cream Cupcakes, I had some leftover egg yolks so I thought I would make a more traditional Portuguese Tarts using a recipe from Bill Grainger.

When there is a birthday at the hubby’s work, one of the women in his office is the dedicated birthday cake maker.

For one of the recent birthdays, she was unavailable so I was asked to make the birthday cake for D.  The cake chosen was one I haven’t made before, being a Hummingbird Cake with Cream Cheese Icing, but it was super simple and went down a treat with everyone, most importantly the birthday girl.

A few months ago I finally signed up to be a Daring Baker, which is something I had been hearing about via some of the blogs I follow.  The main reason it interested me was so that I would make something I might normally not have made as I tend to stick with what I am comfortable with.

This month was no exception.  I had heard of a “three milk cake” a few times recently and it definitely intrigued me.  When I saw that September’s challenge was for Pastel de Tres Leches, I had the reason I needed to finally make this cake, even if I didn’t get to eat it myself.

I still have half a bottle of crème de menthe sitting in cupboard which is slowly being used up since making the Purple Corset Cake.  One day the hubby came across a recipe for chocolate dipped crème de menthe marshmallows on the interweb and encouraged me to make them.  I didn’t have the right amount of gelatine required in that particular recipe, so I turned to my copy of Marshmallow Madness by Shauna Sever (where the Chocolate Malt Marshmallows came from) and lo and behold there was a recipe for Crème de Menthe Marshmallows so I got to work.

One of my favourite flavour combinations in this world happens to be “cookies and cream”.  Generally, if there is something cookies and cream flavoured I will try it at least once, whether it is chocolate (Hershey’s is my top pick), ice cream (Connoisseur is the ONLY brand as far as I am concerned) or as a cupcake.

Now I have tried a lot of cupcakes and am still yet to find my favourite so I thought it would be an opportune time to attempt my own Oreo cookies and cream cupcakes.

To mark the first year since I started my current job, I made white chocolate panna cotta with rose water syrup and took it in to share with my colleagues.  Since then, I have been encouraged to make it again and so after another two and a bit years I finally did (no need to rush these things).

For a morning tea we were having to mark the upcoming wedding of one of the women in the office, a request was made for me to bring something sweet and after suggesting this dessert to the bride to be, I didn’t need to go through any of the other options I had in mind.

The timing also worked out well as the ingredient for the next Get Your Chef On hosted by White Lights on Wednesday and Four Marrs One Venus was announced and it was chocolate.  It was all too perfect so I signed up to participate.

I use Swiss Meringue Buttercream (or SMB for short) a lot.  You have heard me go on and on about it as my weapon icing of choice, so I thought it was about time it got a post of its own to share the variations and tricks I have learned along the way.  You have seen me use it as the filling in my Purple Corset Cake and Bûche de Noël, and for piping beautiful decoration on a wedding cake, cupcakes and my very first ombre petal cake.  There have certainly been a few disasters along the road, with a batch or two thrown away, but regardless it is wonderful to work with, and when it is done right it looks, and tastes, exquisite.

High Tea Series - Chocolate Rose Biscuits from Cath's Cookery Creations! @CathsCookeryI am quite addicted to piping a rose pattern having honed my skills on a wedding cake, a cake for the local Inner Wheel group as well as on the top of cupcakes.  So why not use the same technique for biscuits?  The blog that inspired the rose pattern posted some Neapolitan Spritz Cookies earlier this year and I knew straight away that I had to make them.  Although I didn’t package them quite the way Amanda at i am baker did (which is super cute), I did show them off on my new high tea stand so these Chocolate Rose Biscuits with Rose Water Buttercream could be part two of my high tea series.

Red Velvet Cupcakes from Cath's Cookery Creations! @CathsCookeryCan you believe that on Wednesday it will be one year since I published the first post about My Best Friend’s Wedding Cake?  It is just absolutely crazy.

So for my celebratory post on my first blogiversary (as those in the biz call it) I thought I would share the cupcakes that inspired the cake that inspired the blog.  These red velvet cupcakes are always popular whenever I make them, so much so that I made over 300 of them one weekend for a bunch of my brother’s friends.  I absolutely adore everything about them.

Chocolate Coconut Slice

Chocolate Coconut Slice from Cath's Cookery Creations! @CathsCookeryI remember my mum making this Chocolate Coconut Slice often when I was a kid.  The recipe my mum used was originally from a friend of hers and it was made using a butter cake packet mix as the base.

When I got the urge to make it a few years ago I didn’t have mum’s recipe at hand but I found something very similar in one of my Super Food Ideas magazines which made it from scratch and it tasted just like mum used to make.
