If you follow me on Facebook you will have seen a picture I posted of some delicious looking cupcakes that I made recently, not once, but twice.  They were that good!

You know I have a love of all things “malt” so when these Malteser Cupcakes appeared in my YouTube feed it was only a matter of weeks before they were whipped up in my kitchen.

Yes, this is yet another post that has stemmed from a YouTube video so I wouldn’t be surprised if you thought I spent all day watching YouTube (if I am honest, some days I do).  The creator of this one is Cupcake Jemma who is in the UK and has a gorgeous looking shop by the name of Crumbs & Doilies in London which is on my list should I ever be lucky enough to get over there.

Monte Cream Biscuits

“The Book Man”, as we like to call him, comes to our office every few weeks to drop off another container loaded with books, and sometimes other random items (such as a bath mat which looks like it is made out of two-minute noodles) that he has for sale.  In most cases there are cook books and despite already having a collection of over 100-and-something, I tend to increase my collection and on this occasion there was a book by Anneka Manning called Mastering the Art of Baking.

Anneka’s book covers everything including cakes, muffins, breads, pastries and desserts with all of the recipes including a few step-by-step pictures in addition to the “basics” section at the beginning of the book.

I was in a biscuit mood on one particular weekend so for the first recipe to be made from this book, I decided on the Monte Cream Biscuits which are a homemade version of a popular store-bought variety.

So you will have gathered by now that I am in love with the rose shape/swirl as I use it for my cupcakes, on cakes and even, to a possibly far-fetched connection, in my vegetable tart.  It will come as no surprise that I actually own a rose shaped cake tin.

I have had this beautiful tin from NordicWare for quite some time now and I definitely do not use it enough.  So it was time to call on another recipe I have had pinned for quite some time now, being a Maple Apple Cake, to showcase the gorgeous shape this tin creates.

Quite a while ago, 2nd July 2012 to be exact, a very cute post appeared in my feed reader for some cupcakes.  The post was by Steph from Raspberri Cupcakes, who inspired the Fruit Tingle Macarons, for her Milk and Chocolate Chip Cookie Cupcakes.

I tend to decorate my cupcakes quite basic with my favourite rose swirl piping technique, but there are quite a few different cupcakes on my Pinterest board decorated with mini pancakes, various flowers, cream puffs and mini versions of baking equipment that I hope to try.  These cupcakes are quite cute and really easy, plus you cannot beat this classic combination so I present these Milk and Cookies Cupcakes for your viewing pleasure.

For the latest birthday cake at the hubby’s place of employment, a sticky date cake with butterscotch sauce was requested.  As with the hummingbird and carrot cake I have made them previously, this was another that I had not attempted before so I checked my trusty Women’s Weekly Classic Cakes book, which of course contained said recipe, and got to work.

When there is a birthday at the hubby’s work, one of the women in his office is the dedicated birthday cake maker.

For one of the recent birthdays, she was unavailable so I was asked to make the birthday cake for D.  The cake chosen was one I haven’t made before, being a Hummingbird Cake with Cream Cheese Icing, but it was super simple and went down a treat with everyone, most importantly the birthday girl.

Given all the red velvet goodies that I make, there is always buttermilk left over that I need to find a use for.  Recently, I strayed from my tried and true scone recipe and found a recipe for buttermilk scones on Taste.com.au to try with very pleasing results.

Luckily for me the official scone tester, my father-in-law, was coming around to help the hubby with a couple of projects and he is always willing to be a guinea pig for my cooking.  Especially when it comes to scones.

Mini Orange Chocolate Chip Muffins – High Tea Series (Part 3)

Mum made two different chocolate chip treats when we were kids.  My brother and I both loved the chocolate chip cookies but he was not a fan of the chocolate chip muffins, which was great for me.  From memory I think it was because of the orange flavour which is kind of funny now as he loves orange chocolate, so much so that the hubby and I gave him about five kilograms of Jaffas for Christmas a few years ago.  Needless to say, he went off orange chocolate for a while again.

For the final tier for my High Tea, I needed something small so I decided to make Mini Orange Chocolate Chip Muffins which would fit quite nicely.

Rose Petal Scones

Now I am a scone lover from way back.  Growing up, I remember going to my Nan’s house to make scones, or help her eat the one’s that she had just finished baking.  Smelling them as I walked through the front door and seeing them on top of the stove wrapped in a tea towel waiting to cool is one of the most vivid things I remember about my time cooking with Nan.

One of the places on my “to visit” list has been The Victoria Tea Salon in the new Westfield shopping centre after reading about it on Not Quite Nigella’s blog.  I am not a tea drinker, but given my love of all things sweet and cute, I was ensuring we were able to go on our recent trip to the big smoke to savour their scones.

The hubby and I have a little addiction to pine nuts.  We will put them in everything we can whether it be pasta, lasagne or salad.  However, I have never had them in a sweet dish.

Imagine my delight when I bought Classic Cakes by The Australian Women’s Weekly with one of the very first cakes in the book being a Lemon Sour Cream Cake which just happens to be topped with pine nuts.  The oven was calling.
