Chocolate Macarons

Following the Easter long weekend, the hubby and I took the following week off as well to enjoy a short break.  Whilst we went away over Easter, when we returned home we pottered around the house and had a little stay-cation.  Of course I had big plans of catching up on the ironing, sorting out some of the kitchen cupboards and cooking a whole bunch of meals to put in the freezer, but alas, none of that eventuated.

The kitchen did end up getting a bit of a workout last weekend so stay tuned to the blog over the next few weeks as there is some deliciousness in store for you my friends.

First on the agenda was a batch of macarons.  It has been over six months since my last macaron post, and on this occasion I thought I would whip up a batch of simple, but very tasty, Chocolate Macarons.

I believe I have mentioned once or twice my dislike of fondant and the hubby especially hates it.  But as it is pretty regularly used in the cake decorating world I need to suck it up and find something that I actually am happy working with and that I actually like eating.

My friend Chuy from Chuy’s Cakes (you may have noticed the link on the right hand side to her blog, but you can also check her out on Facebook – her Farm Cake is one of my favourites) told me ages ago that she makes her own marshmallow fondant so I finally got around to searching the interweb for a recipe to try.  You can’t rush these things.

When there is a birthday at the hubby’s work, one of the women in his office is the dedicated birthday cake maker.

For one of the recent birthdays, she was unavailable so I was asked to make the birthday cake for D.  The cake chosen was one I haven’t made before, being a Hummingbird Cake with Cream Cheese Icing, but it was super simple and went down a treat with everyone, most importantly the birthday girl.

Last, but by no means least, of the flavours made for the 30th birthday macaron tower were the Cherry Ripe Macarons as chosen by C.  When I found out that this was C’s flavour and I can honestly say it was something I wasn’t expecting and was a little bit freaked at first because for whatever reason, I couldn’t recall ever eating a Cherry Ripe before in my life.  But I took one for the team and tried a few Cherry Ripes when I was testing out a couple of recipes for the ganache and I can say I am a fan.

Since I first started making the popcorn and malteser macarons, I have had lots of practice at them as they are certainly my most popular variety.  It also happened to be one of the first posts on my blog and so some, well the majority, of the photos left a lot to be desired.

Even though I have made them quite a few times since, and have always meant to take some more photos, I never did.  When the time came to make the macaron tower I thought I would at least get a couple of new feature photos rather than doing the step by step process again.

Salted Caramel Macarons

One of the most popular flavours around these days is salted caramel.  I see it in tarts, biscuits, cupcakes and certainly macarons.  So when B requested Salted Caramel Macarons for her part of the 30th birthday macaron tower, I was excited to give it a go.

There are numerous recipes out there for salted caramel macarons, and the one I used was from one of my 100+ cookbooks being Secrets of Macarons by José Maréchal.  It is an awesome little book with lots of info on how to make these fiddly little things and I refer to it regularly.

Where I work, on your birthday you bring in a cake to share with everyone but if truth be told, any day is a good day for cake in our office.  Recently it was K’s birthday and the cake she made was an Orange and Almond cake.  After the first few bites, there were a few requests for the recipe and I decided to give this moist, gluten free cake a go myself last weekend.

Crème de Menthe Marshmallows

I still have half a bottle of crème de menthe sitting in cupboard which is slowly being used up since making the Purple Corset Cake.  One day the hubby came across a recipe for chocolate dipped crème de menthe marshmallows on the interweb and encouraged me to make them.  I didn’t have the right amount of gelatine required in that particular recipe, so I turned to my copy of Marshmallow Madness by Shauna Sever (where the Chocolate Malt Marshmallows came from) and lo and behold there was a recipe for Crème de Menthe Marshmallows so I got to work.

Fruit Tingle Macarons

The hubby and I were off to spend a few days with friends and as the hubby was taking some of his home made beef and pork jerky for P (the boys love their jerky), I thought I would take something sweet for B seeing as how sugar is our weakness.  Given it has been a while since I last made macarons I thought it was a good time to whip up one of the varieties that I had on my macaron Pinterest board for a while now.

Steph from Raspberri Cupcakes, a blog I have been following for years now and was the inspiration for the Checker Board and Honeycomb Cake as well as the Snowmen Macarons on my White Christmas Cake, has used a fruit tingle icing for an orange cake and then also used it to top some passionfruit cupcakes, with the leftovers being used for some macarons.  I fell in love with them as soon as I saw them and knew that the upcoming trip would be the perfect opportunity to make some fruit tingle macarons of my own.

Chocolate Rose Biscuits – High Tea Series (Part 2)

High Tea Series - Chocolate Rose Biscuits from Cath's Cookery Creations! @CathsCookeryI am quite addicted to piping a rose pattern having honed my skills on a wedding cake, a cake for the local Inner Wheel group as well as on the top of cupcakes.  So why not use the same technique for biscuits?  The blog that inspired the rose pattern posted some Neapolitan Spritz Cookies earlier this year and I knew straight away that I had to make them.  Although I didn’t package them quite the way Amanda at i am baker did (which is super cute), I did show them off on my new high tea stand so these Chocolate Rose Biscuits with Rose Water Buttercream could be part two of my high tea series.
