Lamingtons and Sprinkletons

There is a rule, in my house anyway, that on Australia Day you must eat a lamington.  I did kind of break that rule this year, although we did eat Pavlova instead, but I think I more than made up for it by making a whole bunch of them a couple of days later.

A friend of mine from Mexico Victoria was staying with us at the time, and they do things a little differently down there by filling their lamingtons with jam so I made half of the batch the traditional way with just the plain cake dipped in chocolate and covered with coconut, and the remainder filled with jam and covered in coconut.  I did run out of coconut so the remainder of the jam lamingtons were covered with coloured sprinkles, hence Sprinkletons were born.

Four (and a bit) Cheese Sauce

Four (and a bit) Cheese Sauce from Cath's Cookery Creations! @CathsCookerySo the home made soft pretzels have been a hit in our house since they made their first appearance on the weekend we celebrated our first wedding anniversary.  Since then, I believe we have made them three or four times, with two of those being a double batch (so 24 of the things).

One afternoon, we were making them for the hubby’s folks as well as a friend of his and were wanting another dipping sauce to go with the mustard.  The hubby’s choice was a cheese sauce so I ran with it.

Strawberry Cloud Cake

While playing “flick the channels” with the TV remote one evening, which the hubby absolutely loves hates, I stumbled upon a New Zealand cooking show called The Free Range Cook with Annabel Langbein as the host.  At that particular moment, she was making a Strawberry Cloud Cake which looked stunning and so simple.  We waited for the cook book to come out before we made it, which we picked up on a trip to Melbourne and the weekend after we got home was the first of many times that this dessert has been made.

Chocolate and Caramel Brownies

Last year, Adriano Zumbo had a television series about his work and in the third episode he headed back to the town where he grew up.  In that episode, he visited the local school and made chocolate and caramel brownies with some of the students.

The recipe looked pretty darn tasty which was a good invitation to make it as far as I was concerned.

The hubby and I have a little addiction to pine nuts.  We will put them in everything we can whether it be pasta, lasagne or salad.  However, I have never had them in a sweet dish.

Imagine my delight when I bought Classic Cakes by The Australian Women’s Weekly with one of the very first cakes in the book being a Lemon Sour Cream Cake which just happens to be topped with pine nuts.  The oven was calling.

At my primary school, we often had a day or week where a particular country was the focus.  One year was the United States and in the newsletter that came around there was a recipe for Chocolate Chip Cookies.  As the recipe is for the most ridiculously good Chocolate Chip Cookie, since then it has been the only version that has ever been made in my family.  As they say, if it ain’t broke, don’t fix it!

Cinnamon Scrolls

The first time I had cinnamon scrolls was when a friend of my brother’s came over from Canada to visit about 4 years ago.  They were the fluffiest, gooiest and most delicious cinnamon treat I had ever had.  I previously have had a love/hate relationship with cinnamon but it is now easily one of my favourite spices (it is tied for first place with nutmeg).  Of course this meant I had to track down a recipe so I could continue making these myself.
