
About a year ago I pinned one of the most awesome looking vegetable tarts I have ever seen to my Pinterest board Vegetarian and Vegan Delights . Rather than the veggies being laid flat in the tart base, the slices were arranged in a spiral perpendicular to the base and the result looked amazing.
My version was not quite as amazing looking as the original Vegetable Arty Tart from Vicky’s blog Statsy , but it certainly was very tasty and I can’t wait to try this again with some other vegetable and filling combinations.
Winter for me means soup and one soup I make every winter, and occasionally at other times during the year, is Roast Pumpkin Soup. Pumpkin has to be one of my favourite vegetables, with butternut pumpkin by far my favourite variety. I could eat roasted butternut pumpkin until the end of time but I would probably start to look like one after a while so best not.
One of my favourite things in this world is pasta. And it is a good thing too because apparently a lot of restaurants think that if your vegetarian you must love pasta as that is usually the default vegetarian dish on the menu. I am not whining too much about it, I would just like another choice or two sometimes.
Reader warning: This recipe is in no way healthy for you (well, most of the recipes on this site aren’t healthy, but this one especially). It is full of potato, cream, breadcrumbs and cheese but my goodness is it tasty.
