Since I first started making the popcorn and malteser macarons, I have had lots of practice at them as they are certainly my most popular variety.  It also happened to be one of the first posts on my blog and so some, well the majority, of the photos left a lot to be desired.

Even though I have made them quite a few times since, and have always meant to take some more photos, I never did.  When the time came to make the macaron tower I thought I would at least get a couple of new feature photos rather than doing the step by step process again.

One of the most popular flavours around these days is salted caramel.  I see it in tarts, biscuits, cupcakes and certainly macarons.  So when B requested Salted Caramel Macarons for her part of the 30th birthday macaron tower, I was excited to give it a go.

There are numerous recipes out there for salted caramel macarons, and the one I used was from one of my 100+ cookbooks being Secrets of Macarons by José Maréchal.  It is an awesome little book with lots of info on how to make these fiddly little things and I refer to it regularly.

September is a busy month birthday wise, as I am sure most people appreciate.  For me, across nine days there are nine birthdays (plus a few stragglers at the beginning and end of the month), with six of those falling on the 11th and 12th.  This year also happens to be the year all my friends from school are turning 30 (I am next year given I was the youngest of the group).  One of my friends, who you may remember from My Best Friend’s Wedding… Cake, decided to have a party for her 30th and I volunteered to make the cake.  M hadn’t decided what she wanted but when I told her that I was going to buy a macaron stand (US readers check out the Macaron section of my store for your link) that I had been eyeing off for a while, the decision was made.  M requested a macaron tower for her 30th birthday.

Where I work, on your birthday you bring in a cake to share with everyone but if truth be told, any day is a good day for cake in our office.  Recently it was K’s birthday and the cake she made was an Orange and Almond cake.  After the first few bites, there were a few requests for the recipe and I decided to give this moist, gluten free cake a go myself last weekend.

One of my favourite flavour combinations in this world happens to be “cookies and cream”.  Generally, if there is something cookies and cream flavoured I will try it at least once, whether it is chocolate (Hershey’s is my top pick), ice cream (Connoisseur is the ONLY brand as far as I am concerned) or as a cupcake.

Now I have tried a lot of cupcakes and am still yet to find my favourite so I thought it would be an opportune time to attempt my own Oreo cookies and cream cupcakes.

Fruit Tingle Macarons

The hubby and I were off to spend a few days with friends and as the hubby was taking some of his home made beef and pork jerky for P (the boys love their jerky), I thought I would take something sweet for B seeing as how sugar is our weakness.  Given it has been a while since I last made macarons I thought it was a good time to whip up one of the varieties that I had on my macaron Pinterest board for a while now.

Steph from Raspberri Cupcakes, a blog I have been following for years now and was the inspiration for the Checker Board and Honeycomb Cake as well as the Snowmen Macarons on my White Christmas Cake, has used a fruit tingle icing for an orange cake and then also used it to top some passionfruit cupcakes, with the leftovers being used for some macarons.  I fell in love with them as soon as I saw them and knew that the upcoming trip would be the perfect opportunity to make some fruit tingle macarons of my own.

Given all the red velvet goodies that I make, there is always buttermilk left over that I need to find a use for.  Recently, I strayed from my tried and true scone recipe and found a recipe for buttermilk scones on Taste.com.au to try with very pleasing results.

Luckily for me the official scone tester, my father-in-law, was coming around to help the hubby with a couple of projects and he is always willing to be a guinea pig for my cooking.  Especially when it comes to scones.

Peach Ombre Petal Cake

I was lucky enough to be asked to make the cake to celebrate the 90th birthday of my friend’s grandmother.  When the G-Star was asked what cake she would like for  her birthday, the answer was for the same as the wedding cake.  The decoration had to be different so instead of piping roses on the outside as I did for the wedding cake, I used two techniques I had been wanting to use on this scale for a while – ombre and the petal technique.  The result is this Peach Ombre Petal Cake… red velvet of course.

I use Swiss Meringue Buttercream (or SMB for short) a lot.  You have heard me go on and on about it as my weapon icing of choice, so I thought it was about time it got a post of its own to share the variations and tricks I have learned along the way.  You have seen me use it as the filling in my Purple Corset Cake and Bûche de Noël, and for piping beautiful decoration on a wedding cake, cupcakes and my very first ombre petal cake.  There have certainly been a few disasters along the road, with a batch or two thrown away, but regardless it is wonderful to work with, and when it is done right it looks, and tastes, exquisite.

Mum made two different chocolate chip treats when we were kids.  My brother and I both loved the chocolate chip cookies but he was not a fan of the chocolate chip muffins, which was great for me.  From memory I think it was because of the orange flavour which is kind of funny now as he loves orange chocolate, so much so that the hubby and I gave him about five kilograms of Jaffas for Christmas a few years ago.  Needless to say, he went off orange chocolate for a while again.

For the final tier for my High Tea, I needed something small so I decided to make Mini Orange Chocolate Chip Muffins which would fit quite nicely.
