Normally this is the time of year where I would take a look back at the posts from the last 12 months and share with you the top 10.  However, there is the slight problem that you can count the number of posts for 2016 and 2017 on one hand and two of those aren’t even recipes.

So when I looked up on the very top shelf of my pantry recently, which I don’t often see given my short stature, I discovered there were four boxes of Oreo cookies up there, patiently waiting to be turned into something delicious (not that they aren’t delicious eaten straight from the packet).

With some friends coming over to visit, I was in the mood to make something chocolate so it was the perfect opportunity to whip up this very simple, four ingredient, No Bake Oreo Chocolate Tart.

So I don’t know about you, but I am SUPER excited for the new Beauty and the Beast movie opening this month.  This is one of my all time favourite movies – I have watched the animated version I don’t know how many times, learned how to play a few of the songs on the piano in my youth, wished I had an occasion to justify purchasing this dress and have my eye on this Lego set.

As March 23 gets closer, more and more delicious cake/cookie/dessert tributes are appearing in my Facebook feed or YouTube/blog subscriptions, plus I have been spending lots of time on Pinterest procrastinating researching.  I am amazed with every single one of them so thought I would compile my favourites to share with you and just to mix things up, there are a couple of non-edible ones in here as well.

When organising my best friend’s baby shower, I asked what sweet treats she would like me to make for the day.  At the top of the list was macarons and despite my Popcorn and Malteser Macarons being M’s favourite, for her baby shower she asked if it was possible to make some that tasted like one of her favourite lollies.

It just so happened that they were my favourite lolly as well so I set about creating these Pineapple Lolly Macarons.

For the months leading up to Christmas 2015 I kept changing my mind as to what dessert I was going to make.  It had to be special as it was our turn to host Christmas again so I considered macarons, meringues, a giant cupcake and even a gingerbread house.

All of that went out of the window when I came across a video from Rosie’s Dessert Spot in my YouTube subscription list for a Christmas Wreath Cake.  It was what I had been waiting for and Rosie made it look so simple I had to give it a go!

As I was catching up on my YouTube subscriptions, this little cake appeared in the list for one of my favourite channels, Cupcake Jemma. The hubby happened to be around at the time and watched it with me then requested I make it immediately.  Unfortunately for him, there were no blueberries in the house, but the next day I headed to the shops to pick up some to make this ridiculously delicious Blueberry Crumble Cake.

On a somewhat recent shopping trip I came across some freeze-dried fruit powders from The Melbourne Food Depot at a local store.  As I was checking out the different varieties, I spied the passionfruit powder and immediately picked it up as the hubby and I both looooooove passionfruit.

It did take me a little while to get around to using it, which is normally the case for anything, but as I was in the mood to make macarons for some folks we had coming around, and it also turned out to be October’s Daring Bakers challenge, I decided to grab the powder and an extra ingredient, to make Popping Passionfruit Macarons.

Butterscotch Molten Lava Cake

Way back in 2013, the hubby and I sat down and watched another episode of one of our favourite YouTube channels, Laura in the Kitchen.  This particular episode was for a molten lava cake, but not chocolate in flavour as you might often see.  Whilst the episode was still playing, the hubby searched the interweb to find the key ingredient, which isn’t readily available in Australia, to make the scrumptious looking Butterscotch Molten Lava Cakes.
